One of the undoubted main attractions at the Kon Tiki – now effectively a ‘holiday village’, with bar, lounge, restaurant and holiday homes all on the one Shannonside location – is the beautiful Waterview restaurant. This fabulous restaurant, which overlooks the majestic River Shannon, is receiving great reviews since recently re-opening for business. The Kon Tiki bar, function room and restaurant is owned by Strokestown businessman Kevin Campbell, who has enthusiastically embraced his role as proprietor of the renowned premises, which is located about two miles from Rooskey village. Indeed Kevin’s ownership of the Kon Tiki has been marked by his determination to refurbish and modernise the famous facility – something he has done in some style with a complete overhaul of the bar and function room and the addition of a state-of-the-art restaurant which can seat up to forty customers. ‘I felt there was an opening for another good restaurant in the area’ Kevin told the Roscommon People. Kevin, who thanked his fiancée Lorraine Carrig for all her support, said the decision to incorporate a restaurant had proven very popular. The beautiful restaurant re-opened for business earlier this month and the response of the public has been fantastic. ‘We’re delighted with the feedback we’ve received since re-opening,’ the Strokestown man said. ‘We’ve had locals, visitors, people who are on the Shannon, and a great many of them have already returned or put friends in contact with us.’ Kevin paid tribute to his chefs and all his staff and promised that the introduction of bar food is now being planned.
