Launch of multi-cultural cookbook in Roscommon 

A new multi-cultural ‘Taste of Roscommon Community Cookbook’ was officially launched by Irene Greene of Galway Roscommon Education and Training Board on Monday last at South Roscommon Family Resource Centre. 

  The new book contains recipes from all over the world, representing the rich and diverse population of County Roscommon.

  Speaking at the launch, Felicia Loughrey of South Roscommon Family Resource Centre, said the cookbook had “been in the works since 2020” but was affected by the Covid-19 pandemic. 

  She added that those involved in the publication were delighted to receive input from a wide range of cultures including Slovakian, Brazilian and Cantonese contributors. 

  Officially launching the book, Irene Greene said the production was a joint effort between GRETB, local library services, and Family Resource Centres.

  “It was a great project at a time of doom and gloom,” she said.

  “It was brilliant to see everyone so enthusiastic about representing their own countries and recipes…we couldn’t not get this published as a book. Once it is launched it will be sent to all national Family Resource Centres. This is a great success for County Roscommon”.

  Monday’s launch was attended by a number of contributors to the book as well as Cathaoirleach of Roscommon County Council, Cllr. Joe Murphy and local Independent Cllr. Kathleen Shanagher.
